The Cortijo Fuente Guijarro is located 2000 meters above sea level in the natural park of Sierra Nevada. All apple production is entirely by their own hard work and is obtained through organic farming, which is facilitated by the cold climate of this altitude.
Manuel and Sara have collected the oldest apple trees, varieties that are more acidic and less present on the market, but the most suitable for making cider. Locally these varieties are called Peros and are mostly extinct. The few old specimens already present on the farm have been preserved and 500 wild apple trees (prunus malus) were planted, then grafted with old varieties collected with a lot of effort throughout the region.
Picking apples in the mountains is done with the help of mules, as the roads are inaccessible to any other vehicle. Elaboration in the cellar is also quite natural. No additives or manipulation of any kind.
